¼ cup cornmeal
½ cup all purpose flour
1 egg
½ cup milk
ground cayenne pepper to taste
seasoned salt to taste
salt and pepper to taste
1 cup minced conch
½ onion minced
½ bell pepper minced
2 stalks celery minced
2 cloves garlic minced

Mix all ingredients together in bowl. (If it seems too thin add more cornmeal). Form into 2" balls. (I use an ice cream scoop). Refrigerate for 2 hours before cooking. Heat vegetable oil to 365 degrees. Drop in one at a time and let cook until golden brown.

Makes approximately 5 dozen. Serve with sauce
(recipe below).

Sauce:
2 tablespoons ketchup
2 tablespoons lime juice
1 tablespoon mayo
1 tablespoon hot sauce (or to taste)
salt and pepper to taste
